In early July 2025, Raffles Hotel Singapore launched a two‑pronged culinary celebration, affording guests an immersive journey through the street food of India and Southeast Asia. The festival unites the classic elegance of the Tiffin Room with the casual charm of the Raffles Courtyard hawker showcase.
Tiffin Room Street Food Festival (July 7–20)
Under the expert guidance of Chef de Cuisine Kuldeep Negi, the Tiffin Room revisits iconic Indian street foods with elevated flair 2. Highlights include:
- Raj Kachori: A crispy Rajasthan snack stuffed with lentils, chickpeas, chutneys, yogurt, and spices.
- Crispy Prawn & Masala Uttapam: South Indian lentil pancake topped with golden prawns and tomato-coconut chutney.
- Seekh Kebab Roll: Spiced lamb kebab wrapped in Malabar paratha with radish raita.
- Pav Bhaji: Buttered bread with spiced vegetable mash, pickled onions, and chili.
- Malpua & Mango Rabri: Saffron‑infused pancakes with mangoy thickened milk dessert.
Menus are priced at SGD 118++ for vegetarians and SGD 128++ for non‑vegetarians, with an optional SGD 88++ wine pairing.
Regional Hawker Showcase (March–September)
The Raffles Courtyard’s second installment of the Regional Hawker Showcase features rotating chefs from Southeast Asia in partnership with Makansutra 3. Highlights include:
- July 7–13: Chef Jeffry Sie from Bandung presents Gudeg, a Javanese jackfruit stew cooked with 25+ spices, beef skin puffs, braised chicken, tofu, and sambal.
- August 11–17: Wenila Nadarajan from Malacca features Chitty Nonya cuisine—heritage Tamil‑Malay fusion—including wild starfruit fish egg curry and fried krill dishes.
- September 15–21: Filipino chef Sau Del Rosario from Pampanga serves Lechon—succulent spit‑roasted pig—and Pinakebt, a local vegetable medley.
Each showcase week is enhanced by two SGD 20++ cocktails and select Riesling pairings curated by Raffles sommeliers.
